It’s getting to be that special cooking/baking/eating time of year again, so we thought we would share some of our favorite Colorado River tour recipes — but it’s only fair if you share with us, too! Last year, we posted a cranberry pumpkin loaf recipe. We’ve also, at the request of MANY guests, posted our very popular Mexican train wreck recipe in the past. I’d like to dedicate this post to a simple recipe we use on our Grand Canyon rafting tours that has a lot of easy variations, and I’d like to give props to each of the boatmen who first showed me his preferred method. This is not to say these were the first guides to dream up the recipe, but these were the first guides to show them to me!
Grant’s Hearty Maple Pancakes
So, you might have been told otherwise by a clever guide but, those pancakes we serve on our Grand Canyon expeditions? We just whip the pancake batter together from the boxed mix. For Grant’s Hearty Maple Pancakes, mix in a package or two of instant maple and brown sugar oatmeal. You’ll love ’em!
Jason’s Eye-Opener Pancakes
For Jason’s version of this breakfast staple, use your favorite beer in the mix, in addition to water. It will give you a nice, hearty pancake as well!
We often serve these pancakes Chris’ style on the river, with blueberries stirred in, or with fruit piled on top.
